5 cups macaroni (8 ounces uncooked)
The Sauce
- 4 tbsp butter
- 4 tbsp flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 cups milk
- 1+ cups shredded cheddar cheese (as you wish) – reserve some for topping
- vegetables/meats as desired (I use peas and Quorn chick’n tenders)
- Cook macaroni, mix in any vegetable/meat additions when done cooking.
- In a large-ish saucepan, over medium heat, melt the butter. Add flour and whisk quickly (you are kind of creating a roux here.)
- Alternatively add the milk and cheese, stirring until fully incorporated.
- Add the salt/pepper and any other seasoning (I use a tbsp of chinese hot mustard and some Tabasco sauce and Chache)
- In an 8×8 or 9 x 11 pan, layer the macaroni and the cheese sauce until complete.
- Top with cheese.
- Bake uncovered at 350 for 20 minutes

Pudding Shots1 small pkg. INSTANT choc. pudding
3/4 C. milk
1/4 C. Vodka
1/2 C. Irish Cream
8 oz. Extra Creamy Cool Whip
Mix pudding and milk for a couple of minutes with an electric mixer, then add alcohol, mix well. Mix in Cool Whip.
Put into individual serving cups with lids and I furnish plastic spoons. Keep in the freezer.

Lesson 1: Stop adding ground flax to everything. Stop. Just stop already. And buy some real sugar.
These were sugar cookies. That I threw some flax into. And I used granulated sugar.
And then to top it off, I added raisins. To the top. They went back to their original grape shape for a while and then exploded into the singed cookie topping you see before you.
Despite the many flaws, they actually don’t taste too bad. And I didn’t burn myself .

Ech. It’s dusty in here.
It’s been 2.5 months since my last confession blog post. You don’t want to hear all of the excuses, do you? Let’s move on.
Since my last post, my mother arrived safely and departed safely and returned hom safely.
I’ve been working a lot – strangely, I am working on two blogs about dogs. I hope I don’t get typecast. I really don’t want to be the dogbloglady.
Lately I’ve been working on a project revamping six blogs for a company that’s going to start a blog media company thingy.
We’re going to the Outer Banks for a little vacation thingy at a beach house that is so incredibly packed with ammenities, I can’t believe how little we’re paying for it.
I’m working on the blog here, you know, design-wise, so it’s going to look like crap for a while, but I don’t know if anyone actually looks at blogs anymore. I don’t. I just read your feeds. Sorry. I think eventually everyone is just going to have one RSS feed that everyone else is going to subscribe to. No Twitter, blog, etc. Oh – and it will be implanted in your brain.

The drive from New Mexico to North Carolina involves direction like:
Merge onto I-40. Continue to 1730 miles.
It’s not an especially fun drive unless you have just graduated from college and think that Albuquerque is the best place on earth and that you’ll finally live in a cool place with fun things to do. Or, if you are leaving Albuquerque to drive to Virginia six years later because you cannot wait to get away from that dusty, brown city and you can’t imagine why anyone would ever want to live there.
My mom is making that drive as we speak. It’s about 1757 miles. On Interstate 40. The first night, she called and said that they’d made it as far as Santa Rosa, NM. I checked Google Maps and that’s a solid 143 miles.
She should be here in about 11 days.

I found some Ramen noodles in the cabinet that are at least two years old. I think they were from 2005.
So I ate them (minus the “flavor” packet.)
Good news!
They taste just as bad three years later.
